2 pieces tilapia or fish of your choice (cleaned and scales removed) | |
2 teaspoons salt | |
1 cup cooking oil | |
350g bamboo shoots fresh or in a tin | |
3 cloves garlic | |
1 medium sliced onions | |
1 thumb-size ginger (thinly sliced) | |
1 tablespoon oyster sauce | |
1 tablespoon red curry paste | |
1 piece curry leaf (thinly sliced) |
Fried Tilapia or any kind of fried fish is easy to cook. I’m sure that we all have our own ways of frying fish. Pair with stir-fried bamboo shoots just make it a perfect tasty meal.
1. | Rub salt all over the fish including the insides. |
2. | Heat oil in a wide frying pan |
3. | When the oil is hot, put-in the fish. Cover the frying pan, but make sure to open it a little so that steam can come out. |
4. | Remove from the pan and arrange in a serving plate. |
5. | For the stirfried bamboo shoots: Slice the garlic, ginger and chop onion. Heat a wok with oil for 5 minutes, and stir-fry bamboo shoots, garlic, onions and ginger |
6. | Add red curry paste, sliced curry leaf and continue stir-frying until bamboo shoots are soft and tender |
7. | Add oyster sauce and salt to taste. |
8. | Transfer them on a plate and serve along with fried fish. |
9. | Serve with steamed rice. |
